Abstract
Purpose This research aims to study whether and how digital transformation has influenced the high-quality EVO olive oil and wine sectors, starting from the preliminary results presented in section 1.1. Being the research question the purpose of the whole study, every act of the research will aim to answer it, following a distinct path according to the required needs. There are multiple sources of research questions and for this research, the existing literature has been chosen as the most appropriate. The objective of this research is twofold. On the one hand, it wants to contribute to the literature about DT already consolidated; on the other hand, through its results, it wants to contribute to the poor literature about the digital transformation of the high-quality wine and EVO olive oil sectors in Italy. Specifically, the research will focus on the use of digital transformation within the sales channel. Through this choice, it will be possible to understand if and how consumption habits have changed in these specific sectors since the introduction of e-commerce and whether this trend will continue over time.
